Birthplace of Tokugawa Ieyasu, the shogun who unified Japan, Okazaki is a city in Aichi Prefecture whose reconstructed castle stands as the centrepiece of the old town. The city is also the origin of hatcho miso, a distinctively aged soybean paste still produced here. Set in the heart of Aichi with mountains visible from the city, Okazaki draws on both its feudal history and its culinary heritage.
