Ipiales

A high-altitude city in southern Colombia near the Ecuadorian border, Ipiales sits on the plateau known as Tuquerres e Ipiales and is nicknamed "the city of the green clouds" for the greenish hue that sometimes settles over it in the afternoons. Its economy runs largely on cross-border trade, and the local table features guinea pig, known here as kuy. The wider region is ringed by UNESCO World Heritage sites.
